Re-inventing a Classic

This past weekend we presented Carol and Raul's wedding cake at the Clinton Town Hall in Clinton, Massachusetts. Our lovely bride Carol is very traditional and wanted to have an old-school wedding cake with separate tiers, and fountains. Sometimes making classic cakes can feel a bit dated but I was up for the challenge. Carol is young and vibrant so I wanted to highlight her youth by adding a modern twist to her vision.
I decided to give it a fresh look by adding ruffles emulating the wedding dress, and gilded decorations. The touch of gold made the cake look regal and timeless. The bride also wanted to highlight her Caribbean roots by having bright flowers. I added white lilies and coral roses with touches of champagne spray roses. To add to the tropical theme, the bride and groom selected for cake flavors Passion Fruit, Morir Soñando (orange cream) and Pina Colada.
Now let's talk about the size of this cake. Holy macaroni! it's huge! Let's go over all it went in to create this cake:
For this 250 servings cake I used 156 eggs, 14 lbs of flour, 18 lbs of butter, 24 lbs of sugar, 15 lbs of fondant and about 10 grams of edible gold dust (believe me, that's a lot of gold). It took 45 hours to complete, 1.5 hours to deliver and 1.5 hours to set up at the venue.
After all was said and done, I think I accomplished what I set out to do, create a breathtaking, classic, and timeless centerpiece for a delightful couple who celebrated their love in from of all their family and friends, and I couldn't be more proud. Mission Accomplished! ![]()

The former head of a popular seaside resort in Melbourne has been granted bail, six months after admitting he sent two people to prison for 20 years.
Cannabis-lover Andrew Duxbury, 51, was arrested in January as part of a sting operation targeting wealthy people by the Royal Commission into Organised Crime.
He was released at an early date in July after being found guilty in court on two charges that he took two people to prison on drug charges.

The first case involved an elderly woman who was found with the drug MDMA in her mouth, while the second, involving drug smuggler Daniel Jones, was brought to court on 18 March.
The Crown prosecutor, Catherine MacAlpine, told the court the women were not the intended recipients but that they were told to drink the alcohol or go to the toilet to give themselves a high, and that Duxbury had encouraged them to do so.
Duxbury denied taking the women to his hotel room during the three hours he spent there, and accused police of trying to conceal evidence from them.
He told the court he sent both women to prison after taking them to his casino during an alleged drug deal.
"I'm disappointed, because I had no involvement there," he said. "And I also believe there is a strong case to make, because those three years I did a lot of the things that I'm accused of, and then I did them in a club."
Duxbury said he had no idea where Jones, 53, from Queensland, went in October 2013 while working at a local restaurant, and could not recall who bought the drugs.
Duxbury said: "And my concern really is that they
are protecting the drug business and putting the public at risk, and I'm just disappointed that in a time of desperate need it would be given to a man who has no idea how it's done."
Duxbury said he had heard about the drugs allegations for years and would have done anything to avoid them.
He said: "The biggest problem is not about drugs. The biggest problem is they're taking money out of our pockets, and they're getting out of control.
"These are really young people in a very dangerous environment where they're getting their heads handed to them."

Wagga by election could reveal how much liberal brand damaged during Harper's decade in office.
Voters now want leaders to say when they believe a Conservative leader won't follow through on promises to cut taxes and boost defence spending.
The same survey has shown, however, that strong support for Liberal Leader Justin Trudeau's promise to end "dying to protect" has dropped by six percentage points, meaning it has also dropped by more than six points since Trudeau was elected.
"We've heard a lot about the Conservative brand on the issue," said University of Ottawa's Gilles Gauthier. "I'm surprised at how much of an impact it is having on the Liberal Party."
Gauthier said most Canadians who are in support of same-sex marriage also believe Stephen Harper and his team can make tough decisions without the help of the Liberal majority.
"For them and I and others who want them to change the rules to support marriage equality, it comes down to a basic belief that they want to work closely with and with Trudeau and his team," he said.
The numbers don't match the poll's conclusion, however. The Liberal poll had 38 per cent support, down two points from an October poll. The Conservatives polled at 41 per cent, down three points.
The NDP, which also won a majority at the 2013 election, has won only one seat in the House of Commons for the last six years, and could lose one more for the first time next year.
The poll was conducted online with 1,072 Canadians from Oct. 17 to 17.
The survey has a margin of error of plus or minus 3.7 percentage points 19 times out of 20.
Gauthier said he doesn't expect this election to be a defining moment for the relationship between the two parties, although some people's opinions may shift.
He said he also doesn't think this will come as a surprise to both parties.
"I wouldn't expect this result to completely set them off on an acrimonious relationship," he said.
"But it's very important to see what the government does next."
