Re-inventing a Classic

This past weekend we presented Carol and Raul's wedding cake at the Clinton Town Hall in Clinton, Massachusetts. Our lovely bride Carol is very traditional and wanted to have an old-school wedding cake with separate tiers, and fountains. Sometimes making classic cakes can feel a bit dated but I was up for the challenge. Carol is young and vibrant so I wanted to highlight her youth by adding a modern twist to her vision.
I decided to give it a fresh look by adding ruffles emulating the wedding dress, and gilded decorations. The touch of gold made the cake look regal and timeless. The bride also wanted to highlight her Caribbean roots by having bright flowers. I added white lilies and coral roses with touches of champagne spray roses. To add to the tropical theme, the bride and groom selected for cake flavors Passion Fruit, Morir Soñando (orange cream) and Pina Colada.
Now let's talk about the size of this cake. Holy macaroni! it's huge! Let's go over all it went in to create this cake:
For this 250 servings cake I used 156 eggs, 14 lbs of flour, 18 lbs of butter, 24 lbs of sugar, 15 lbs of fondant and about 10 grams of edible gold dust (believe me, that's a lot of gold). It took 45 hours to complete, 1.5 hours to deliver and 1.5 hours to set up at the venue.
After all was said and done, I think I accomplished what I set out to do, create a breathtaking, classic, and timeless centerpiece for a delightful couple who celebrated their love in from of all their family and friends, and I couldn't be more proud. Mission Accomplished! ![]()

Lebanon's Minister of Health Dr. Mohammad Al-Shakur has said at least one death has been confirmed after a powerful quake struck the country's southeast last week, injuring one person in the southern city of Tripoli.
Al-Shakur said the death was among 12 injuries the army is treating in Tripoli city since Thursday.
Libya's Foreign Ministry urged the international community for an immediate end to fighting and urged all sides to avoid any unnecessary violence or conflict until all military assets have returned to the streets.
Al-Shakur said government forces are advancing in Tripoli, backed by aerial bombardment, to retake the city from Islamic State militants.
The war in eastern Libya has killed hundreds of people and put the country on the brink of civil war.

Athletes passport a ticket to clean tourneys
Babar Patel, editor of cricket's national daily Express Tribune, said: "The BCCI had promised that when the tour is finished, players will come to its stadium.
"If we do not get the players here in time, we will have to cancel the tour in favour of domestic matches."
There is no question of any immediate repercussions to the tour as the BCCI has a large following of players playing in domestic tournaments on a regular basis.
However, fans will find a lot more uncertainty for the players, and in some cases they may have to cancel their plans because of bad weather.
"A lot of India fans are travelling to the upcoming Champions Trophy. If they do not have any tickets, there's a chance they will cancel their contracts for the season," Mr Patel said.
There was no immediate comment from Cricket India after the news of their players missing the tournament was published in the Express Tribune.
Mr Patel is among those calling for the players not to travel to India as it will make them too busy at home.
"I think the players should go and do whatever is necessary to get home as soon as possible," Mr Patel said.
The players, who are expected to play cricket in England and Wales this winter, are expected to leave for the UK before April 28.
In the lead up to the tour, the players have been busy organising a 'home tour' ahead of the tour date.
Earlier this month Mr Lobo was seen driving around the capital by his own car, accompanied by his wife, who is a resident of Amritsar, on his official work schedule.
The 'home tour' is expected to be a week-long programme with Mr Lobo taking part in multiple cricket matches for the home team's national team.
Babar Patel, editor of cricket's national daily Express Tribune, said: "If the players miss a match there won't be too much to do as they will be away from home for a week."
However, the BCCI have already announced the players won't be flying out in time and there are plans to change the itinerary.
"The schedule for the tour is already known and there will be no change that cannot be anticipated for further clarification in the short term," BCCI chief Shashank Manohar said in an email.
"We will continue to hold meetings with our players to understand where we will have them on the road ahead of our tour, and further to offer whatever support we can to them when they arrive."
