Re-inventing a Classic

This past weekend we presented Carol and Raul's wedding cake at the Clinton Town Hall in Clinton, Massachusetts. Our lovely bride Carol is very traditional and wanted to have an old-school wedding cake with separate tiers, and fountains. Sometimes making classic cakes can feel a bit dated but I was up for the challenge. Carol is young and vibrant so I wanted to highlight her youth by adding a modern twist to her vision.
I decided to give it a fresh look by adding ruffles emulating the wedding dress, and gilded decorations. The touch of gold made the cake look regal and timeless. The bride also wanted to highlight her Caribbean roots by having bright flowers. I added white lilies and coral roses with touches of champagne spray roses. To add to the tropical theme, the bride and groom selected for cake flavors Passion Fruit, Morir Soñando (orange cream) and Pina Colada.
Now let's talk about the size of this cake. Holy macaroni! it's huge! Let's go over all it went in to create this cake:
For this 250 servings cake I used 156 eggs, 14 lbs of flour, 18 lbs of butter, 24 lbs of sugar, 15 lbs of fondant and about 10 grams of edible gold dust (believe me, that's a lot of gold). It took 45 hours to complete, 1.5 hours to deliver and 1.5 hours to set up at the venue.
After all was said and done, I think I accomplished what I set out to do, create a breathtaking, classic, and timeless centerpiece for a delightful couple who celebrated their love in from of all their family and friends, and I couldn't be more proud. Mission Accomplished! ![]()

The federal government announced the fine Tuesday at a news conference in Jacksonville, saying a company from Fort Myers paid about $2,700 for dumping the company's waste of wastewater into Tallahassee's Everglades River.
The company, Everglades Enterprises, owns the creek. Its waste is in Clearwater, Florida, about 60 miles northeast of Miami.
Federal officials say they are investigating the company because, under federal law, they can't force a local company or a local farm to clean up a sewage spill on their property.
This is the first time that such a fine has been levied by federal officials in Florida. The company paid $2,700 for the spill, and the government says it owes it about $17,000.
The federal officials say the company did not have the required level of sanitation, and did not clean up its waste properly. They are now investigating the case.

Blackall prison camp escapee to serve more time in US prison on Tuesday
Two Americans ââ?¬â?? a man and a woman ââ?¬â?? had escaped from prison in China this morning after three years of house arrest there.
They have also been charged with murder.
The pair were discovered late last night, after visiting relatives at a friend's home in the city of Qingdao.
It came after their relatives reported a prisoner escape from a prison cell in nearby Wuhan earlier this morning.
Both prisoners have not been identified.
According to Wuhan City Governor Huang Dongyan and local news portal Zhai Jinyao, all the inmates escaped in an ambulance at 4am this morning.
Huang said the pair had arrived from a prison camp in the northwestern province of Gansu.
Their journey was delayed during a five-hour crossing to the city of Gansu, where they were met by police officers and local guards, before the men were taken to Wuhan's Zhaihe prison.
Huang said he heard the pair was captured by the state on arrival to the prison, in a prison in the city's Hucheng district.
There, they spent the rest of the night in jail awaiting trial.
'An international criminal'
Citing a source who had been briefed by the US State Department, Huang said the couple had been arrested in January.
It is not clear what the US would do with the freed prisoners.
Both are being held in China's northern Guangdong province.
They remain in custody. The US has provided only an "expedited transfer" to avoid any long-term consequences, the White House said.
A White House official on Sunday told reporters in Beijing that the case was under control and "no further action" was expected.
A spokesman for Chinese foreign ministry said Tuesday that China was willing to allow the two to return to their home countries.
Huang said his US contacts had assured that China would help to return the pair to their homes. He added that it was still difficult to confirm whether they had fled or were released.
Chinese authorities and the US have not commented on the prisoner escape.

The election, though, will determine whether or not the party can be a force on the regional level that can threaten to break the opposition-led government of Champa-led Noyola-based Togolese Prime Minister Jean-Bertrand Aristide. The regional parties will certainly not be happy about that.
Even if the presidential election were to go ahead next month, this doesn't change the party's prospects, said Domingos.
"We don't need an increase in seats in parliament, we only need an increase in votes," said Domingos.
The real question is what kind of country will be left if the political system doesn't change? Domingos said that change in the voting system is inevitable, given the electoral system's current structure.

The suspect has been identified as 36-year-old Allan P. Zaremba.
The video was taken at the intersection of Blair and Leslie streets, about 90 minutes before the victim, who was riding in an older black SUV, was killed.
Zaremba was shot multiple times at point-blank range and died instantly, police say.
The victim was taken to hospital in serious condition.
"To me it's senseless, it's heartbreaking and, to have this guy shoot my friend that he knew so well," said witness David Miller.
Witness: I saw my friend laying there. All I saw was the bullet hole and smoke and then the cop came on my side to try and get him out. We were walking through that neighbourhood when it happened.
When asked if he would have given himself a chance to live, Zaremba looked at me and said "No." We just lost one life. He wasn't a bad guy, he wasn't bad. He was just on his way to the wrong car. I wanted him to stop.
The suspect, later identified as 35-year-old David P. Carter, faces charges of manslaughter, endangering the welfare of a child, possession of a firearm for lawful purposes and possession of cocaine.
In addition to carrying firearms, Zaremba was also seen smoking cocaine, court heard.
"I am concerned with these guys. I am concerned with this woman," said Miller.
The Crown's office said the circumstances surrounding the shooting remain under investigation, but no additional charges are expected.
The incident is now being dealt with by the police.
